There is no doubt that Indian cuisines are really popular in UK right now. The reasons are simple, the dishes are delicious, smells really good and even looks good as well! Though initially some people were queasy about the spices and grease, but now we’re past that and most people, regardless of roots or religion, include Indian cuisine dishes during celebratory occasions.Chicken Tikka Biryani: What’s Not to Love about It?Most Indian cuisine dishes have some distinct “wow factors”. There is something special and often distinct about those dishes. Even though the spices and herbs used are often quite similar. Maybe that adds to the “mystic” hint in these dishes.

However, my most favorite Indian cuisine dish is Chicken Tikka Biryani. Though it is quite a common dish, but not everywhere it is prepared properly.

To be honest, I love to cook. But cooking an authentic Chicken Tikka Biryani isn’t in my bragging rights. However, I still enjoy counting hoe they do this. Well, I am definitely not a recipe writer. But I love how the process works. And I am sure you would enjoy as well.

At first, the chicken is marinated with vinegar, ground red chilli, hot spice powder, ginger-garlic paste, black pepper and salt for 30 minutes.

Then the chicken is cooked in oil for 20 minutes in oil to make it tender, and steamed with coal.

Thirdly, chopped onions are fried to golden in a pan. Then some finely chopped tomatoes, red chilli powder, turmeric and coriander powder I added. And then all these are roasted finely. Then yoghurt is added and the mix is roasted again.

Then the scented green herbs (coriander and mint leaves) along with green chillies are added with chicken and mixed finely.

Then rice is boiled with salt and all these spices. Then the rice and the spices are layered in two different pots and left to steam for a while.

Then comes the most challenging part (to me), mixing these two without breaking the rice.

Well, Chicken Tikka Biryani is quite a complete dish to me. But it tastes even better when it is eaten with some chutney (preferably mint sauce or lime pickle).
